Here is the math, published by DoorDash on their own pricing page. Their Marketplace commission is 15% on the Basic plan, 25% on Plus, and 30% on Premier for delivery orders, plus 6% on pickup. Their own Storefront product, which is ordering that happens on your website, is 0% commission. You pay standard card processing of 2.9% plus 30 cents and nothing else.
That gap is the whole argument. Every order you move from the app to your own site turns a commission into margin. You are not going to get off the apps entirely and you probably should not, they bring you new customers. But the regulars who already know your name should be ordering from you, not from a marketplace taking a quarter of the ticket.
The reason they do not is usually that your website makes it harder than the app does. That is fixable.
This is the single most common mistake on restaurant websites and almost nobody gets told about it. If your menu is a PDF or a photo of a printed menu, Google cannot read the words on it. Neither can ChatGPT. Somebody searching for birria tacos in San Jose will never find you, because as far as search is concerned your site does not contain the word birria anywhere.
Most of your traffic is somebody standing on a sidewalk deciding where to eat. A PDF makes them pinch and zoom. A photo of a menu makes them squint. Both cost you the order.
Your menu gets built as real text on a real page, organized by section, readable on a phone without zooming. Every dish name becomes something Google can index and something an assistant can quote. We also mark it up with Menu structured data so search engines understand what each item is and what it costs.

Half of San Jose searches in English and half searches in Spanish, and a lot of restaurant websites here pick one and lose the other. Some try to solve it with a translate widget, which is worse than picking one, because Google sees a jumble of two languages on the same page and struggles to rank either.

No, it is the normal case. Menu updates are part of the monthly plan. Seasonal specials, price changes, a dish you are retiring, send them over and they go up.
No, and building it that way would hurt you. Dish family pages work when there is a real search behind them and enough to say. Aguachiles, ceviches, tacos and catering usually each earn a page. One page per individual item would be thin duplicate content and Google collapses those.
